Gundy Salad

Sometimes you do things that you may think is by chance or rather just a natural progression according to your circumstances. Other times you get that Aha! moment and for reasons unexplainable you get that reality jolt that can steer you in one direction or another.

The other day I was in one of those modes that spun me for a loop and it was very good. In so much as to say that what I did brings me back to a question that always puzzles me.

The question is what is a salad? People answer this simple little question many different ways from different parts of the world. Most Jamaicans will say it is another name for a tomato. Or a Jamaican football player will say that’s when you push the ball between your opponents feet during the game and afterwards make ridiculous comments and laughter. Some will also say it is just a piece of lettuce with some kind of dressing.

Well the definitions vary from region to region and in my little time for research I find that the original meaning is to "salt" your food. Yah Mon! So as it were, the other day I was feeling a little, "peckish" as we would say in Jamaica, but I did not want to eat a meal that would hold me over for any time because I was going to go out to eat later.

I looked in the refrigerator and saw a half bottle of Salamon Gundy. Of course the first thing that came to my mind was eating the gundy with water crackers. Unfortunately, I had no crackers or bread in the house. Well I thought to myself I would just run up to the grocery store and get some ‘dryaz’ (bread, bulla, or any baked products).

However, by the time I go to the store I may not be as hungry, so I thought. I looked in the crisper section of the fridge and saw that I had lettuce and some raw spinach. I decided to experiment with what was available and made a ‘rahtid’ salad that surprised even me.

Back in the early eighties I used to eat bully beef salads all the time. So when I made this it reminds me a little about bully beef salad.

Try this one out for your next party or social gathering.

Gundy Salad

4 tbsp. Salamon Gundy

¼ lb. Chopped raw Spinach

¼ lb. Chopped Lettuce

½ cup Bleu Cheese Dressing

¼ Medium Onion (sliced)

2 tbsp. Raisins

1 tbsp chopped Almonds

1 tbsp. Cashew Pieces

2 drops Lemon Juice

Place the chopped spinach and lettuce in a salad bowl and tossed it around with the other dry ingredients until everything is thoroughly mixed.

Next, mix the bleu cheese dressing and salamon gundy together with the lemon juice. Use a wooden spoon to fold the dressing and fish paste together. You may decide to add more of fish if you want to have a stronger fish taste but don’t increase the amount of lemon juice.

Add the mixed ingredients to the spinach and lettuce mix and fold until the bleu cheese is visible all over the greens. Serve in small bowls and top off with grated cheddar cheese.

Here is a Bully Beef Salad

1 head Lettuce (chopped)

1 can Bully Beef

1 medium Onion( finely chopped)

1 tsp. Pickapeppa Sauce or

2 tbsp. Tomato Ketchup

1 tbsp. Ground Black Pepper

1 large Avocado Pear

Red Bell Peppers

Remove the bully beef from the can and place it in a flat plate. Use a fork and press the bully beef into flat a cake. Now fold in the onions, black pepper, and tomato ketchup.

Fold the bully beef into the chopped lettuce. Slice the avocado and red bell peppers into long slices and garnish the salad. Serve in small bowls.

CAUTION If you use Pickapeppa Sauce instead of the tomato ketchup add it one drop at a time because you don’t want the pickapeppa sauce to dominate the taste of the salad. Pickapeppa Sauce is that powerful.
